Keogh’s Butter Chicken recipe
You will need:
2 chicken breasts
1 onion
2 inch piece of ginger
Half cup of butter
2 Tablespoons garam
masala
Three cloves of garlic
Chili flakes/red pepper
250ml cream
Teaspoon cumin
Dice
both chicken breasts and onion. Fry half the chopped onion with chicken until
brown. While the chicken is frying you can begin to prepare your sauce. First,
add butter, remainder of onion, diced ginger and garlic to a pan on low heat.
Once butter has melted and onions begin to brown, you can add the pasata,
cumin, garam masala and cream. Stir everything and allow to cook on a low heat
for ten mins. Add chicken. Leave to cook on a low heat for 20 mins while
stirring occasionally.
Season
with red pepper/chili flakes depending on how spicy you wish to make it. Also,
if the tomato pasata taste is too strong add a spoon of sugar and more garam
masala. Serve with a sprinkle of coriander on top, basmati rice and naan bread.
Coriander is a real like it or loathe it taste so perhaps ask prior to adding.
